This is a two day recipe whichever way you approach it, because the mac has to set completely before it can be cut. Rushing the chill is the only way to fail at it.

Warm the evaporated milk and butter, melt in the American cheese a handful at a time, then the cheddar, mustard powder and white pepper. Keep it thicker than you would for a bowl.
Stir the cooked macaroni through until every piece is coated. The mix should be stiff rather than loose.
Press into a parchment lined 8 by 8 inch tray, flatten the top, cover and refrigerate for at least 4 hours. Overnight is safer.
Turn the slab out and cut into 24 squares with a hot dry knife. If the edges crumble the mix was too loose and needs longer in the fridge.
Flour, egg, panko, then egg and panko again. As with mozzarella sticks, one coat is not enough to contain a molten centre.
Firm cubes hold their shape in the oil. Warm ones spread.
Fry 6 at a time for 2 to 3 minutes until deep gold. Drain on a rack and eat within a few minutes.
